At Taste, the only thing we love more than discovering
cheese is sharing our discoveries with friends. That's why we created Cheese101@TASTE,
a series of small, focused classes we offer covering everything from cheese
basics to region and beverage specific cheese pairings. Classes are casual and designed
for novice and experienced cheese aficionados alike. Most sessions are taught by
our favorite cheese monger George Palmer, and held in Wine Steals' cozy event space
adjoining Taste.
To encourage student interaction and lively discussion in our classes, we keep
class sizes small and once a class fills, a waiting list is formed. After
each class concludes, Taste reopens exclusively for our students who receive a discount
off all purchases made that evening. Students also receive discounts from Wine
Steals on wines used in certain classes. Whatever the topic, Cheese101@TASTE is always a fun, informative and flavorful
experience!

This
marks the fifth round of Beer & Cheese pairings we’ve hosted with Tom and
Lindsay Nickel of O’Brien’s Pub. The previous four rounds have yielded more
than 25 unique pairings making it a fine time to revisit a few of our all-time
(so far) favorites. Just so you don’t think we’re getting lazy, we’ll also
introduce a couple brand new pairings sure to contend for the next favorites
round. Join Tom & George as they wax nostalgic about the amazing pairings
they’ve discovered over the past couple years and discuss the characteristics
that make these beer and cheese pairings work so well. As always, we’re
offering the class twice, first at Taste on Wednesday April 23rd, and
again on Sunday April 27th at O’Briens.

WHAT?
How to Pair Cheese and Beverages $45

“What
Goes With What?” Boy if we had a dollar for every time this question is asked
at Taste! What makes classic pairings like Chevre and Sancerre, Champagne and
Triple Crème, Gouda and Beer, Port and Stilton work so well while seemingly
minor substitutions can result in a clash? In this interactive, informative
session, we’ll give an overview of the various cheese styles and the general
flavor characteristics differentiating cow, goat and sheep milks. The lesson is
best taught by example so we’ll include a few of the classic pairings listed
here, some surprise pairings we’ve discovered, as well as a pairing clash or two
to help students gain a better understanding of the fundamentals of pairing
beverages with cheese.

Our
European tour continues this month as we feature our favorite Italian flavors.
Have you ever tasted Parmigiano Reggiano from the center of the wheel? How
about real Fontina val d’Aosta? Both are prime examples of classic Italian
cheeses that have spawned countless imposters – none that can compare to the
bold, complex flavors delivered by the authentic, DOP versions. We’ll sample
other Italian treats in this 90-minute tour of the world’s most bountiful boot.
